Dark Mascavo Sugar – Intense Flavour and Natural Texture

Dark mascavo sugar stands out for its richer colour and pronounced molasses flavour, offering a bold and deep sweetness that enhances recipes with more complex flavour profiles. Its aromatic richness makes it an ideal ingredient for gingerbread, BBQ sauces, stews, and other intensely flavoured dishes.

Unlike light mascavo sugar, its crystals are coarser and slightly sticky, giving it a rustic and granulated texture. This type of sugar is highly valued in gastronomy for its natural character and versatility in cooking.

The term ICUMSA refers to the International Commission for Uniform Methods of Sugar Analysis, an organisation responsible for setting the classification standards for sugar based on its refinement level and colouration. The ICUMSA 600-1200 category includes less processed sugars with a higher molasses content and darker colour, widely used in the food and beverage industry.

ICUMSA 600-1200 Sugar – Characteristics and Production Process

ICUMSA 600-1200 sugar, commonly known as brown sugar, is a semi-refined product obtained after the first crystallization of sugarcane juice. Unlike refined white sugar (ICUMSA 45), this sugar retains a higher amount of molasses, giving it its characteristic brown color and a more intense, natural flavor.

Due to its raw nature, this type of sugar has a denser texture, and when subjected to further refining, it can reach up to 70% white sugar content, transforming into a more refined version. Its versatility makes it ideal for industrial uses, bakery, liquor production, and other foods that require a more pronounced sweetness and a complex flavor profile.
